Barbecue Pulled ‘Shroom Sammie

A meaty, delicious and healthy substitute for pulled pork!

I LOVE this recipe! It’s so easy and the texture of the mushroom is fabulous.This will definitely satisfy the meat eater.  The Wicked Healthy Sarno Brothers (Chad and Derek) have transformed and elevated mushrooms to unmatched levels! I learned this technique from them.

Ingredients

1 large (or 2 -3 regular) King Trumpet (Trumpet or Eryngii) mushroom, shredded with a fork

1/2 tsp each of:

smoked paprika

ground cumin

garlic powder

onion powder

chili powder

1/4 – 1/2 cup Oil-free BBQ sauce (like Trader Joes, Bone Sucking’ Sauce or Austin’s Own)

Instructions

Preheat oven to 400 and line a baking sheet with parchment paper.

Heat a wide pan. Add the shredded mushroom and a pinch of salt. Stir periodically and cook a few minutes, then stir in seasonings to coat. Cook several minutes more as the shreds release their water and cook down – about 7-10 minutes. Add enough BBQ sauce to coat the mushrooms and cook another minute or two.

Spread the shreds on the parchment lined baking sheet so they are not piled. Place on the center rack of your oven and cooked about 12 – 15 minutes, tossing with tongs or a spatula about half way through. They should be nice and caramelized and have some charred spots.

Serve on a toasted Ezekiel or whole wheat bun with hot sauce and your favorite condiments.

*to shred the mushroom, scrape lengthwise with a fork and pull the pieces apart. You can also break up the end and use that, too.
