Peanut sauce

Great for bowls, soba noodles, spring rolls and salads

This sauce is very yummy! I love it on a soba noodle salad (see recipe) but it makes a great sauce for greens, grains and beans, and a dipping sauce for spring rolls. If you thin it with a little water it makes a great dressing for a fresh vegetable salad

Ingredients

3/4 cup peanut butter

1/4 cup low sodium Tamari

1/4 cup rice vinegar (or fresh limes juiced)

3 T maple syrup

2 garlic cloves, minced

1 piece peeled fresh ginger, grated or minced

(can used 1 T each of jarred garlic or ginger instead)

1/4 tsp crushed red pepper flakes or 1 tsp sriracha or samba oleok

1/3 cup chopped cilantro (stems and all!).

Instructions

Add everything except cilantro to a blender or food processor and blend until smooth and then stir in chopped cilantro. Alternately you can whisk everything together in a bowl and chop the cilantro to stir in into it.
