Pepita Lime Vinaigrette

Perfect with Taco Salad

I love a good salad dressing. When I started avoiding oils in my dressings, I needed to create some satisfying options in order to kick my salad game up a bit. One of my favorite Austin restaurants, Casa De Luz, makes all of their dressings with whole ingredients. The dressings contain healthy fats from blended nuts and seeds. I missed a little fat in my dressings when I stopped making them with olive oil. Now I enjoy them even more! I hope you do, too.

Ingredients

1/3 cup toasted pumpkin seeds, unsalted
1/2 cup water
1/4 cup fresh lime juice
3 T date syrup (or agave)
2 tsp dried oregano
2 tsp dried thyme
2 tsp dried basil
1/2 tsp garlic granules
1/2 tsp sea salt
1/2 tsp black pepper

Blend everything together! Blend less if you prefer a little texture or blend more for smooth..
