Nice Cream

This is a wonderful option for ice cream lovers! Use this base recipe to create your own unique flavors. Sundays and banana splits have never tasted this good or been good for you! Try swirling some Date Caramel in it (see recipe) for a decadent tasting dessert.

Ingredients

Frozen bananas

Optional: frozen cherries, strawberries, blueberries, pineapple or mango

Unsweetened plant milk (I like oat or almond)

2 or 3 pitted medjool dates

1-2 Tsp alcohol-free vanilla (I like Trader Joe’s)

Instructions

Pour 1 -2 cups of your plant milk into a food processor or high speed blender then add couple cups worth of frozen fruit in and your vanilla and dates if using. Start on low, tamping down or stirring as you pulse the fruit until it’s broken down. Run your machine on high as you drizzle in more plant milk as needed to create an ice cream (not smoothie!) texture.

Spoon into bowls and top with chopped fresh fruit, a drizzle of date or maple syrup, dairy free dark chocolate chips, chopped nuts and seeds.

Variation: Add almond extract with a mix of bananas and cherries to make a cherry-almond Nice Cream. Or bananas with mint extract and dairy-free dark chocolate chips (and spirulina for color) to make a mint chip Nice Cream.

If you have a Champion Juicer, use the flat attachment (instead of the screen) and it comes out just like soft serve!

Tip: buy bananas in bulk. When they are ripe, peel, break into pieces and store in a zip lock in the freezer so you always have Nice Cream just a whir away!
