Crispy Teriyaki Tofu with Wok Sautéed Veggies

1/4 cup water
1/4 cup soy sauce or tamari
3 T sweetener (brown sugar, coconut sugar, maple)
2 T rice vinegar
2 T mirin
1 large minced garlic clove
1 small peeled and minced piece of ginger
A few drops toasted sesame oil for flavor


Bring to a boil and simmer on low for 15 minutes, then add a slurry of cornstarch and water (2 T of each) and stir into sauce until thickened.

Heat a wok and use a little toasted sesame oil, water or broth to sauté on high, stirring frequently (you can splash in some liquid and put lid on for a couple minutes to steam).

Once the veggies are cooked but crisp, fold in the tofu and sauce. Garnish with toasted sesame seeds and sliced scallions, and serve over rice.
